The Kaluga, one of the largest freshwater fish in the world, can grow up to 5.6 meters in length. It requires 15 years to mature and begin producing roe. Its caviar is known for rich, layered flavours — firm yet silky in texture — with a pronounced creamy aroma and occasional hints of seaweed.
